One pot healthy soup recipes-Vegetarian soup is like a hug in a bowl. It is made with fresh vegetables, herbs, and sometimes grains or lentils. The best thing is – it’s simple, healthy, and can be made in many different ways.

You can use any seasonal vegetables – carrots, beans, peas, spinach, pumpkin, tomatoes, corn – whatever you like. Add some garlic, ginger, and fresh herbs like coriander or parsley for more taste. If you want it filling, you can add noodles, pasta, or rice.

Soups are light on the stomach but still keeps you full. It’s perfect for rainy days, winter evenings, or even when you are feeling a bit under the weather. It gives warmth, energy, and that “home” feeling.

Here are some of my favourite one pot healthy soup recipes , you can try when craving for warm & comforting meal.

 

1. One Pot Carrot & Tomato Soup [ Desi Style]

This soup is a warm hug to your taste buds . Its healthy, easy to make and perfect for rainy evening or cold winters.

INGREDIANTS [SERVES 2-3]

  • 2 medium carrot [peeled & chopped]
  • 3 medium tomatoes [ roughly chopped]
  • 1 small onion for extra flavour [optional]
  • 2-3 garlic cloves
  • 1 inch piece of ginger
  • 1 tsp butter or oil
  • 1 1/2 cup water
  • salt according to taste
  • 1/4 tsp black pepper powder
  • 1/2 tsp cumin seeds [jeera]
  • a pinch of turmeric powder
  • fresh coriander leaves

HOW TO MAKE 

1. Warm up the pot 

Heat oil or ghee in a heavy-bottomed pan. Add cumin seeds and let them crackle. Drop in the bay leaf for that earthy aroma.

2.Add the flavour maker 

Put in chopped onions (if using), garlic, and ginger. Sauté for 1-2 minutes until the onions turn soft and smell sweet.

3. Add the main ingredients 

Put in the chopped carrots 7 tomatoes. Sprinkle turmeric, salt ,and pepper. Stir everything gently.

4. pour & cook

pour in water. cover with a lid and let it shimmer on low to medium flame for 10-15 min, until carrots are soft and tomatoes turn mushy.

5. Blend it smooth 

Use a hand blender or let the mixture cool a little and blend in a mixer until smooth.

6. Final warm up

Pour the soup back into the pot , taste, and adjust consistency and seasoning. Heat for another 3-5 min.

7 Serve with love 

Garnish with fresh coriander leaves. Serve hot with toasted bread or just sip it slowly from a mug.

 

Tip: For extra richness, add 1 tbsp fresh cream or a little butter before serving.

 

2. Lemon coriander soup [one pot]

This soup is light , fresh and comforting. It is like a gentle breeze on a hot summer day or a warm cuddle on a chilly evening . Fresh lemon, fragrance of coriander and light spices make it the perfect comfort food when you want something tasty and tangy in flavour .

 

Ingredients (for 2-3 servings)

  • 4 cups water or vegetable stock
  • 1 small carrot (finely chopped)
  • 1 small capsicum/bell pepper (finely chopped)
  • 2-3 garlic cloves (finely chopped)
  • 1 small piece of ginger (grated)
  • 1 green chilli (optional, finely chopped)
  • 1 tbsp fresh coriander leaves (finely chopped)
  • Juice of 1 lemon (freshly squeezed)
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper powder
  • ½ tsp oil or butter
  • 1 tsp cornflour mixed with 2 tbsp water (optional, for thickness)

 

How to Make

1. Start with warmth

Heat oil or butter in a deep pot. Add garlic, ginger, and green chilli. Saute for a few seconds until it turns aromatic.

2. Add the veggies

Put in chopped carrot and capsicum. Stir for 1–2 minutes – so they soak the flavours

3. Add water 

Pour in water or vegetable stock. Add salt and pepper. Let it boil for about 5 minutes.

4. Make it smooth (optional)

If you like your soup slightly thick, stir in the cornflour-water mix now. Cook for 1-2 more minutes.

5. Add hero ingredients of the soup

Switch off the gas. Add lemon juice and fresh coriander leaves. Give it a gentle stir – this is where the magic aroma comes alive.

6. Serve with love

Pour into bowls and enjoy it hot. This soup is perfect on its own or with some crispy breadsticks.

 

Tip: Always add lemon juice at the end so the soup stays fresh and tangy.

 

3. One Pot Daal Soup – Comfort In Every Sip

Daal soup is like that comforting friend who never lets you down – warm, nourishing, and full of homely flavours. Daal soup is also known as Indian lentil soup . daal soup can be made with different kinds of lentils [ urad daal, moong daal , chana daal, etc.]  It’s perfect for days when you need something light yet satisfying, and the best part? You only need one pot and a little bit of love.

 

INGREDIANTS : [SERVES 2-3 PERSON]

  • ½ cup yellow moong dal (washed well) or any other daal
  • 4 cups water (or vegetable stock)
  • 1 small onion (finely chopped)
  • 1 tomato (finely chopped)
  • 2 garlic cloves (finely chopped)
  • 1 small piece of ginger (grated)
  • 1 green chilli (optional)
  • ½ tsp turmeric powder
  • ½ tsp cumin seeds (jeera)
  • 1 tbsp ghee or oil
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon  (for serving)

HOW TO MAKE: 

1. Start with adding  the flavours
Heat ghee or oil in a pot. Add cumin seeds and let them pop . Drop in garlic, ginger, and onion. Sauté until the onion turns soft and golden.

2. Add some veggies & spices
Add chopped tomato, turmeric, and a pinch of salt. Cook until tomatoes turn soft and blend in with the onions.

3. Add the daal 
Add washed moong dal. Stir for a minute so the spices coat each grain like a warm hug.

4. Cook it all together
Pour in water or stock. Bring to a boil, then let it simmer for 15–20 minutes until the dal is soft and cooked.

5. Make it smooth (optional)
If you like a creamy texture, use a hand blender to lightly blend the soup. Keep it chunky if you love the bite.

6. Final touch
Taste and adjust salt. Garnish with fresh coriander. Squeeze a little lemon before serving for a tangy flavour.

7. Serve Hot with  warmth
Enjoy it hot, either on its own or with bread, toast, or soft rotis.

 

EXTRA TIP: You can also add a pinch of black pepper or a little crushed roasted cumin before serving for extra flavour.

 

4. ONE POT  HEALTHY SOUP RECIPE: SWEET CORN SOUP 

Sweet corn soup is the kind of dish that makes you smile with every spoon. It’s sweet, creamy, and has that restaurant-style taste but is super easy to make at home. Perfect for evenings when you want something warm, light, and full of flavour or even as a starter for a cosy dinner.

INGREDIANTS:  [SERVES 3-5]

  • 1 cup sweet corn kernels (fresh or frozen)

  • 1 small carrot – finely chopped

  • ¼ cup cabbage – finely chopped

  • 1 small capsicum – finely chopped (optional)

  • 1 tbsp oil or butter

  • 3 cups water or vegetable stock

  • ½ tsp black pepper powder

  • 1 tsp spring onion [ optional for garnish]
  • Salt – as per taste

  • 1 tsp sugar (optional, to enhance sweetness)

  • 1 tbsp cornflour mixed with 3 tbsp water (for thickness)

  • Fresh coriander leaves or spring onion greens – for garnish

 

HOW TO MAKE:

1.Cook the corn
In a pot, add ½ cup of sweet corn with 1 cup water. Boil for 5 minutes until soft. Cool slightly, then blend into a coarse paste with a little water.

2.Start the soup
Heat oil or butter in a pot. Add carrots, cabbage, and capsicum. Sauté for 2-3 minutes until slightly soft but still crunchy.

3.Add the corn 
Add the corn paste, remaining sweet corn kernels, and vegetable stock (or water). Bring to a boil.

4.Season well
Add salt, pepper, and sugar if using. Stir well.

5.Make it creamy
Add the cornflour-water mixture while stirring to avoid lumps. Let it simmer for 3-4 minutes until slightly thick.

6.Serve with love
Garnish with fresh coriander leaves or spring onion greens. Serve hot with breadsticks or crispy toast.

Tip: For a richer taste, add a spoon of fresh cream before serving.

 

5. ONE POT DRUMSTICK SOUP 

Drumstick[moringa] soup is full of goodness , light on the stomach, and so refreshing. In south Indian homes, its often served when someone is ill or feeling low or simply to enjoy its unique flavour and health benefits. Moringa is an excellent source of iron. Consuming moringa can help increase Hemoglobin levels and improve overall blood health. It is rich in calcium and phosphorus, both essential for strong and healthy bones.

 

INGRIDANTS [SERVES 2-3 ]

  • 2-3 drumsticks – cut into 3-inch pieces

  • 1 medium tomato – chopped

  • 1 small onion – chopped (optional)

  • 4-5 garlic cloves – crushed

  • ½ inch ginger – chopped

  • ½ tsp cumin seeds (jeera)

  • ½ tsp turmeric powder (haldi)

  • ½ tsp black pepper powder

  • 1 tbsp oil or ghee

  • Salt – as per taste

  • 4 cups water

  • 1 tbsp fresh coriander leaves – chopped

  • 1-2 tsp lemon juice (optional)

Method

  1. Prepare the base
    Heat oil or ghee in a deep pot. Add cumin seeds and let them crackle.

  2. Add aromatics
    Put in garlic, ginger, and onion (if using). Sauté for 1-2 minutes until fragrant.

  3. Add tomatoes and spices
    Add chopped tomatoes, turmeric powder, black pepper, and salt. Cook until tomatoes turn soft.

  4. Add drumsticks
    Add drumstick pieces and stir well so they get coated with spices.

  5. Boil and simmer
    Pour in water, bring to a boil, then reduce the flame. Let it simmer for 15-20 minutes until drumsticks are soft and flavour has infused into the soup.

  6. Extract the goodness
    Once cooked, you can either serve the soup as is (chewing the drumstick flesh while sipping) or scrape the soft pulp out of the drumsticks and add it back into the soup for a smoother texture.

  7. Finish and serve
    Add fresh coriander leaves and lemon juice for extra freshness. Serve hot.

Tip: For a South Indian twist, you can also add a pinch of sambar powder while cooking.
